Don’t be late! Arrive to port the day before your cruise.
Avoid starting your vacation stressed!  You never want to miss your cruise due to unexpected flight delays, cancelations or traffic jams.

Pack Smart.
One of the best pieces of cruise advice for first-timers is not to overpack. Use travel accessories that do double duty, like a toiletry kit that folds out and hangs by a hook. Toss a couple of hook magnets into your bag to use as additional wardrobe hooks in your cabin.

Under-schedule your first and last day.
It's tempting to rush off to activities on embarkation day, but it's best to get your bearings on board first. Use the first day to unwind and do what you most feel like, whether that's strolling on deck or heading to the spa.

Research your ports in advance.
If you don't have time to read up on your destinations, attend the onboard destination seminars given the day before arriving at each port. A destination expert will share must-see foods, activities, souvenirs, and experiences, along with some history, geography, and weather tips.  This will help you make the most of your time at each port.

Understand currency options.
Many companies charge a percentage for foreign transactions while others don’t levy the fee it all. Check your credit cards to see if there is a fee or not. If you’re interested in getting foreign currency ahead of time. Your local AAA branch can help you with that!

Glamping onboard the ship

Consider a longer itinerary.
While weekend cruises are popular and considered a good way to sample cruising, long-time cruisers will say that they’re quite different from itineraries of a week or more. On longer itineraries, you’ll have the time to truly unwind and explore both the ship and its destinations.

Pre-book activities with a travel advisor before you leave.
We can pre-book specialty dining, shore excursions, and even spa treatments well before you set foot on the ship. Not only will this advance planning get you first dibs on your preferred activities, but you’ll save yourself precious vacation time by not having to attend to these matters once you board.

Double check your data plan.
The urge to share your vacation photos of pristine Caribbean beaches and selfies snapped at historic sites is great, but if you are outside of your country and your data plan is restrictive, that sharing could cost a pretty penny. Before starting your cruise vacation, check your cell phone data plan to learn of its limitations and extra fees or, hopefully, lack of them.

Ingredients

FOR THE VEGETABLES
• 6 tablespoons extra virgin olive oil, divided
• 5 ounces baby heirloom carrots
• 5 ounces red baby beets
• 7 ounces baby or fingerling potatoes, halved
• Salt and freshly ground black pepper to taste
• 1-1/2tablespoons unsalted butter, melted

FOR THE GREMOLATA
• Zest of 2 oranges (or lemons), finely chopped
• 1/4 cup fresh dill, finely chopped
• 1 clove garlic, finely chopped
• 1/4 cup fresh parsley, finely chopped
• Salt and freshly ground black pepper to taste

FOR THE SALMON
• 1-1/2pounds wild-caught Alaska king salmon fillet
• 1-1/2 tablespoons extra virgin olive oil
• Salt and freshly ground black pepper to taste
• 2 teaspoons freshly squeezed lemon juice

FOR THE KALE
• 2 tablespoons extra virgin olive oil
• 1 tablespoon unsalted butter
• 1 shallot, minced
• 1/2 clove garlic, minced
• 5 ounces fresh kale, thoroughly washed,
• Stemmed and roughly chopped
• Salt and white pepper to taste

Grilled salmon

Directions

FOR THE VEGETABLES
Preheat oven to 375°F. Pour 3 tablespoons of the olive oil into a
roasting pan, scatter and roll the carrots and beets in the oil and
season with salt and pepper. Drizzle with additional olive oil. In a
separate roasting pan, cut the potatoes. drizzle with 3 tablespoons
olive oil and season. Place both roasting pans in oven and roast for
25-30 minutes or until tender and golden brown. Brush vegetables
with butter before serving.

FOR THE GREMOLATA
In a small bowl, mix all the ingredients together and set aside.

FOR THE SALMON
Drizzle the salmon with olive oil and season with salt and pepper on
each side. Heat the olive oil in a large cast iron skillet over medium-
high heat. When the oil is hot, add the salmon skin side down and
cook for 3 minutes. Flip the salmon and cook for another 2-3 minutes
or until cooked through. Drizzle with lemon juice before serving.

FOR THE KALE
In a large skillet over medium-high heat, warm the olive oil and butter.
Add the shallots and garlic and cook for 1 minute. Add kale and cook
for 3 minutes, stirring often, until it’s wilted and bright green. Season
with salt and pepper.

Top the salmon with the gremolata and serve with roasted
vegetables, potatoes and kale
